Grafting is a way to assure us that we are reproducing fruiting varieties that we like. If we plant an apple seed we are not sure about what will show up. If we graft a scion (a small branch) from an apple tree to another apple tree or a rootstock, the tree will reproduce the fruit from the original tree that cut we the scion from.
