A wonderful harvest of Jerusalem artichokes can happen now in the fall, and through the winter. The issue with them is gas (farting) whether eaten raw or cooked. Recently my wife and I had a brilliant revelation: include them in our many kim chee and fermented veggie combos. The fermentation, to my thinking, will offset the gassy part of the picture.
