An excellent article on raising an animal that will get you past local livestock ordinances, and can be processed in the kitchen. Many towns have still not gotten on the backyard animal bandwagon, and they continue to enforce laws instituted in the 19th century. In the town of Carbondale, Illinois, where I live, we have been working on overturning the current ban on livestock so that we can keep at least a few hens and possibly some miniature goats. Good progress so far. But for those of you that still live under these restrictions, rabbits are considered pets. They are easy to raise and, of course, they reproduce prolifically, like rabbits.
